Peanut pancake (also known as min chiang kueh) is a yummy tea time snack, and actually really easy to prepare. The good thing about making this at home is the freedom of spreading as much crushed peanut filling you want to satisfy your craving. Feel the nostalgia in every bite taken and reminiscence the good ol’ days!

Watch the video guide below:

1 cup plain flour

½ tsp baking soda

½ tbsp dry yeast

2 tbsps sugar

1 egg

160 ml warm water

¼ cup toasted sesame

25 g sugar

100 g crushed peanuts

1Put all ingredients together and mix well with a whisk. Make sure there are no lumps.

2Cover loosely and let rest for 30 minutes until its bubbly.

3While the batter is resting, put all the fillings' ingredients in a bowl and mix well.

4Lightly oil a pan and heat over low/medium heat.

5Pour half the batter into the pan and cover for 3-4 mins. You can use a spoon to lightly spread the batter to cover the entire pan surface.
