1Squeeze 4 lime wedges into a cocktail shaker, then throw in the skins. Add 4 sprigs of the mint and half each of the Amaretto, Paraiso, lychee juice and ice; shake well.
2Strain the mixture into three cocktail glasses; top up with half the soda water. Garnish with fresh lychees, extra ice and mint sprigs.
3Repeat with remaining ingredients to make a total of 6 cocktails. Serve immediately. Not suitable to freeze.
