APPLE & FENNEL SLAW
1Preheat oven to moderate, 180 C. Line an oven tray with baking paper.
2In a large frying pan, heat oil on medium. Saute onion and pancetta for 3 to 4 mins, until onion is tender. Transfer to a large bowl and stir in pecans, cranberries and thyme. Cool 5 mins. Add pork mince, breadcrumbs and egg and stir until combined. Season and shape mixture into six flattened patties.
3In a large frying pan, heat oil on high. Cook patties for 3 to 4 mins each side until golden. Transfer to tray. Bake 5 to 10 mins until cooked through.
4APPLE & FENNEL SLAW: In a small bowl, combine all ingredients. Season to taste.
5In a bowl, combine mayonnaise and dill. Season.
6Top each roll base with dill mayo, patty and slaw. Cover with roll tops and serve with gherkins.
