The roast turkey is always the centerpiece at any Christmas feast – try our super yummy recipe featuring macadamia stuffing for your festive dinner this year!

 

Ingredients

  • 3½ kg roast turkey
  • 1 tbsp olive oil
  • Roasted pumpkin, carrots, onion, garlic, plus steamed green beans, gravy, to serve

APRICOT, CRANBERRY & MACADAMIA STUFFING

  • 1 tbsp olive oil
  • 4 rindless bacon rashers, chopped
  • 1 onion, finely chopped
  • 2 garlic cloves
  • 2 tbsps thyme leaves
  • 500 g minced pork
  • 3 cups fresh breadcrumbs
  • 1 cup unsalted macadamias, chopped
  • ½ cup dried cranberries
  • 1 egg, whisked

Preheat oven to moderate, 180 C. Lightly grease a baking dish.

APRICOT, CRANBERRY & MACADAMIA STUFFING In a large frying pan, heat oil on high. Fry bacon, onion and garlic 3 to 4 mins until golden and tender. Stir in thyme. Transfer to a large bowl and cool. Add pork, breadcrumb, macadamias, cranberries and egg, mixing well. Season.

Fill turkey cavity with stuffing. Secure with skewers. Tie turkey legs and wings together with kitchen string to secure. Place on trivet in baking dish. Rub with oil and season to taste.

Bake 2 hours, turning occasionally, until juices run clear when pierced.

Remove turkey from oven. Allow to rest, loosely covered with foil, 10 to 15 mins, before carving. Serve turkey with pumpkin, carrots, onion, garlic, beans and gravy.

Tip: Cook turkey 15 to 20 mins per 500 g, plus 20 mins, until juices run clear.
