Salsa Verde Tuna Pasta

When you're hungry and need a delish dish fast, try this 10-minute pasta recipe. The angel hair pasta mixed with tuna and salsa verde will satisfy.

  • Yields: 4 Servings


300 g angel hair pasta (see tip below)

395 g can tuna in olive oil

250 g cherry tomatoes, halved

2 green onions, finely sliced

½ cup slivered almonds, toasted


1 bunch parsley, chopped

½ cup olive oil

4 anchovies

1 tbsp capers

1 tbsp lemon juice

2 cloves garlic, crushed


1Cook pasta in large saucepan of boiling salted water, following packet instructions.

2SALSA VERDE: Meanwhile, place all ingredients in a food processor and process to combine. Season to taste.

3Drain pasta and return to saucepan with salsa verde, tuna, tomatoes and half the green onion. Season to taste. Serve topped with almonds and remaining green onion.

TIP: Angel hair pasta is very fine, so it cooks in half the time of most other pastas, such as spaghetti. Keep a packet handy for when you need to feed the family fast. For a spicy kick, use tuna in chilli oil.
