Spanish Toastie

A very hearty sandwich packed with chorizo sausages, tomato salsa, four-cheese mix and baby spinach inside flour tortillas.

  • Yields: 4 Servings


2 cured chorizo sausages, thinly sliced

4 large flour tortillas

⅔ cup red capsicum dip

1 cup grated four-cheese mix

60 g baby spinach leaves

Bought tomato salsa, to serve


1Heat a frying pan over moderate heat. Cook chorizo for 3 mins or until browned. Preheat a sandwich press.

2For each toastie, place a tortilla on a clean work surface. Spread with a quarter of the dip. Top half of the tortilla with a quarter each of the cheese, spinach and sausage. Fold over tortilla to form a semicircle. Repeat to make 4 in total.

3Cook in sandwich press, in batches, for 4 mins or until heated and toasted. Cut in half. Serve with salsa.
