1Preheat oven to 180 C (160 C fan-forced). Grease an 18 cm x 26 cm slice pan. Line the base and two long sides with baking paper, bringing paper 5 cm above the sides of the pan.
2In a large bowl, whisk together the sugar, vanilla, eggs, oil, butter and lemon zest.
3Sift over the flour, bicarbonate of soda and spices, and stir to combine. Add the mashed banana, carrot and peach; mix well. Spread the mixture into the prepared pan and bake for 35-40 mins or until the cake is golden brown and firm to the touch. Cool in the pan before turning out onto a wire rack.
4LEMON GLAZE Combine the icing sugar with 1 tablespoon of the lemon juice. Stir until smooth and if it needs to a little thinner, add the remaining lemon juice.
5Drizzle slice with the Lemon Glaze. Store in an airtight container.
