Elevate a humble lunch to new heights with this gorgeous steak sandwich with homemade capsicum relish. So delicious and yummy!

Ingredients

  • 4 thin scotch fillet steaks (about 100 g each)
  • 30 g butter
  • 2 tsps olive oil
  • 2 onions, slice thinly
  • 2 tomatoes, slice thickly
  • 4 slices prosciutto or lean bacon
  • 4 ciabattas or buns, split and toast
  • 50 g mixed salad leaves (buy from supermarkets)

CAPSICUM RELISH

  • 2 red capsicums, remove seeds, chop
  • 1 cup brown sugar
  • 1 cup cider vinegar
  • 1 tbsp grated ginger
  • 1 tsp chopped chilli
  • 1 clove garlic, crush

Trim steaks then season with a sprinkle of salt. Set aside.

Combine all ingredients for the relish in a saucepan. Bring to boil over high fire. Lower fire and simmer for 25 to 30 mins, until mixture thickens. Set aside.

Heat butter and oil in a frying pan over high fire. Stir-fry onions for 2 to 3 mins, until they begin to brown and caramelise. Add tomatoes; cook for 1 to 2 mins each side. Remove onions and tomatoes and keep warm. In the same pan, fry prosciutto until crisp. Keep warm.

Top bread bases with salad leaves, tomatoes, onions, beef, prosciutto and relish then top with other bread half.
