Bunny Biscuits With Pink Icing

Get the kids to help you make these cute bunny biscuits as an Easter or birthday treat. These are perfect if you’re looking for an easy Easter biscuit recipe.

In a small bowl, using an electric mixer, beat butter and sugar together until creamy. Beat in egg. Sift flours and custard powder together. Fold through creamed mixture with coconut and vanilla to form a dough. Turn dough onto a lightly floured surface and knead lightly until smooth.

Roll out dough between two sheets of baking paper until 4 mm thick. Chill for 30 mins.

Preheat oven to moderate, 180 C. Line 2 oven trays with baking paper.

Use a bunny cutter to cut biscuits from dough. Arrange on trays. Bake for 12 to 15 mins. Cool on trays for 5 mins, then transfer to wire racks.

05.

ICING In a bowl, combine all ingredients until smooth.

06.

Spread icing over cooled biscuits. Add a small ball of candy floss for a tail.
