Dutch Apple Tart

With flaky pastry and a crunchy crust, this classic Dutch apple tart with healthy oatmeal streusel topping is one of the best desserts ever

Steps

Cream butter and sugar for pastry in a food processor. Add flour and a pinch of salt, then pulse about 3 times. Scrape around the processor bowl and pulse again a couple of times. Add yolks and process until it forms crumbs. Add cold water and pulse until combined.

Turn pastry out onto a loose-bottomed 24-cm metal tart tin. With cold hands, quickly use your fingertips and knuckles to push pastry into the case as evenly and thinly as possible. Pinch pastry up the sides, so edges come up 6 to 7 mm above edges of tin. Make sure the pastry base is even throughout. Place in freezer for about an hour.

Preheat oven at 200 C. Scrunch up some grease-proof paper and spread over pastry case. Fill with dried beans and place in oven for 15 mins. Remove beans and paper, brush base with egg, then return to oven for 5 to 8 mins or until base looks pale brown. Leave to cool.

For the filling, melt butter in a pan. Add sliced apple and spices. Cook and stir over medium-low fire for 20 mins, or until apples start to soften. Add sugar, lemon juice and nearly all the zest. Stir to combine, then sprinkle flour over and stir again. Spoon into pastry base, level it out and leave to cool slightly while you make the streusel.

In a bowl, combine flour, cinnamon, brown sugar, oats, salt and lemon zest. Mix together, then rub in butter until mixture is crumbly. Sprinkle streusel on top of apples. Reduce oven heat to 180 C. Bake tart for 30 mins, or until topping is browned and apples are tender.
