You can’t picture a Christmas feast without a whole turkey, preferably prepared by the hands of those you want to enjoy this special day with. Follow this simple recipe to learn how to prepare a delicious turkey with festive chestnut and cranberry stuffing (and a whole lot of herbs) that friends and family will want to have year after year.

PREPARE THE STUFFING: Add dried breadcrumbs, cranberries, minced celery, minced onions, cooked chestnuts, dried thyme, pepper, mixed herbs, dried rosemary, dried marjoram, salt and softened butter into a large bowl.

Thoroughly mix in all the ingredients with your hands and roll the stuffing into fist-sized balls. Set aside.

Preheat oven to 175 C.

Wash turkey with cold water, and pat dry. Rub salt and pepper into body cavities.

Cut the top part of the turkey’s skin slightly to allow butter to be stuffed between skin and turkey. Loosely fill stuffing into body cavities.

Rub the remaining butter all over the turkey before rubbing more salt, pepper and mixed herbs. Ensure turkey is evenly coated. Close skin with skewers or kitchen twine, and tie drumsticks together.

Place turkey on a wire rack in a medium roasting pan. Add white wine into the roasting pan and drizzle oil all over before covering it with foil.

Roast turkey for 2 hours at 175 C. After 2 hours, remove the foil and roast in the oven for another 1 hour, until golden brown.

Remove from oven when turkey reaches a nice golden brown, place on platter, and allow the turkey to stand for 1 hour before carving.

How long you should roast your turkey according to their weight:

2-2.3kg = 2.15 to 2.45 hours

3.2-4kg = 2.45 to 4.5 hours

4.5-8.2kg = 3.45 to 4.5 hours

8.2-10kg = 4.5 to 5 hours

10-11kg = 5 to 5.5 hours

11-13.5kg = 5.5 to 6.15 hours
