This savoury slice jam-packed with ham, cheese and vegetables is like a quiche and sandwich crossover. The flexible recipe also means you can add any other ingredient you’d like – totalling up to a delicious, and nutritious lunch.
Preheat oven to hot, 200 C. Lightly grease a 20 x 30 cm slab pan. Line base and sides with baking paper.
Sift flour into a bowl. Rub in butter using fingertips, until mixture resembles breadcrumbs. Add yolk and a little water, if required; form into a pliable dough. Wrap in plastic wrap; chill 20 mins.
On a lightly floured surface, roll half the pastry out to fit base of pan. Ease into pan.
To make filling, in a bowl, combine all ingredients; season to taste.
Pour filling over pastry base. Roll out remaining pastry and cover filling; brush with extra egg. Bake 25-30 mins, until golden.
Serve slice warm, cut into fingers.
TIP If the pastry begins to crumble, chill 10 minutes.
