To prepare the white fungus, soak the white fungus in water for 10 mins, remove the hard part. Then, soak overnight in the fridge to give the white fungus a softer texture. (If you had forgotten to do so, you need to soak it for at least one hour before use.)
Break open the luo han guo using a mortar and pestle.
Place all ingredients A in a big pot to boil, then simmer on low heat for an hour.
Discard the luo han guo, pandan leaves and red dates.
Add all the ingredients B and continue simmer for 30 mins.
Add rock sugar to taste. Serve.
