With crisp exteriors and soft flaky interiors, Chinese scallion pancakes (otherwise known as cong you bing) are crowd-pleasers that make a delicious snack any time of the day. But if you’re short on time, we’ve got a hack with an ingredient you can readily find in the supermarket: frozen prata.

And to make it a heartier meal for an easy lunch or dinner, stuff it with a dollop of minced meat. The recipe for the chicken filling works well with pork mince as well as meat-free alternatives too, like tofu with shiitake mushroom mince.

Enjoy them on their own or serve with dipping sauces like hoisin sauce or nuoc cham (a Vietnamese dipping sauce). Or coat the dough with sesame seeds before baking in the oven for a nutty flavour.
