Baked Egg in An Avocado

Ingredients:
1 avocado
1 egg

Method:
Cut the avocado in half and remove pit
Break egg and season with salt and pepper. Whisk egg if desired.
Pour egg into avocado and bake for 3-5 minutes.
Add cayenne pepper or paprika for seasoning.

Avocados in Bacon

Ingredients
Bacon rashers
Avocado -- sliced with pit removed
Brown sugar -- to taste
Chilli powder -- to taste

Method
Cut slices of bacon and wrap around avocado
Sprinkle with brown sugar and cook in a pan for 10-15 minutes.

Avocado Salad with Sweet Potatoes

Ingredients:
1 can of beans (to your liking)
1 can of sweet corn
1 diced tomato
1-2 avocados
1 diced red onion
1tsp chilli flakes
bunch of parsley leaves
bunch of coriander leaves
Juice of half a lime
Paprika
Salt and pepper to taste

Method:
Mix everything except avocados together.
Once mixed, throw in avocado and serve with boiled or roasted sweet potatoes.

Stuffed Avocado With Crab Mayo

1 avocado, pitted (keep husk)
1 tin of crab meat
Mayonnaise
Tabaco
Salt and pepper -- to taste
Pine nuts -- optional

Method:
Remove avocado flesh, mix with crab meat, mayonnaise, tabasco and salt and pepper.
Season to taste.
Serve in avocado husk with pine nuts.
