Avocado and Miso Mash Bruschetta

Bread has always been a breakfast staple for its carbs to give your morning an easy jump start. Add a delicious twist while keeping healthy with a spread of miso, alongside avocado, rocket leaves, capsicum and tomatoes!

Ingredients

  • 1 avocado, mashed
  • 1 tbsp miso paste
  • 2 tbsps lemon juice
  • 4 slices multigrain bread, toasted
  • 20 g baby rocket leaves
  • ½ red capsicum, thinly sliced
  • ¼ cup drained, chopped sun-dried tomatoes, thinly sliced
  • 1 tbsp balsamic vinegar

Steps

01. Place avocado, miso and juice in a bowl, coarsely mash.

02. Spread bread with avocado mixture.

03. Top with rocket, capsicum and tomato.

04. Serve drizzled with balsamic vinegar.

Tip: For a wholesome breakfast, serve bruschetta with some crispy bacon, and poached or fried eggs.
