Banana Walnut Bread
Baked goods are always comforting, but none more than a homemade loaf of banana walnut bread. Light, moist and delicious with an added crunch, this sweet treat will win the hearts of everyone – and it's so simple to put together, it'll make a great gift!

Ingredients
- 125 g butter
- 1 tsp vanilla essence
- ¾ cup caster sugar
- 2 eggs
- 1 cup mashed banana
- ¾ cup self-raising flour
- ¾ cup plain flour
- ½ tsp bicarbonate of soda
- ½ cup chopped walnuts
Steps
01. Preheat oven to 180 C. Grease two 8 cm x 26 cm bar pans, line bases with paper; grease paper.
02. Cream butter, essence and sugar in small bowl with electric mixer until light and fluffy, add eggs one at a time; beat until combined. Stir in half the banana with half the sifted dry ingredients and half the walnuts, then stir in remaining banana, dry ingredients and walnuts; stir until combined.
03. Spread mixture evenly into prepared pans. Bake for about 45 mins. Stand 5 mins before turning on to wire rack to cool. Serve buttered.
