Beef Burger With Fruit Chutney And Blue Cheese

Ingredients
- 500 g minced beef
- ¼ cup parsley, leaves picked & chopped
- 2 tbsps whole egg mayonnaise, plus extra to serve
- 2 tbsps Cornichons, finely chopped
- 1 tbsp Dijon mustard, plus extra to serve
- 1 tbsps capers, drained & finely chopped
- 3 anchovies, drained & finely chopped
- 1 eschalot, peeled & finely chopped
- 2 tbsps olive oil
- 4 toasted sesame seed buns
- 2 cups watercress, washed & leaves picked
- 160 g, sliced blue cheese
- Fruit chutney, to serve
Steps
01. In a medium bowl, combine beef, parsley, mayonnaise, cornichons, mustard, capers, anchovies and eschalot. Season. Divide and shape mixture into 4 flattened patties. Cover and chill until required.
02. Heat oil in a large non-stick frying pan on high. Cook patties 2 to 3 mins each side until cooked through. Drain on paper towel.
03. Spread toasted buns with extra mustard and mayonnaise. Place watercress and slice of blue cheese on base of each bun. Top with beef patties, chutney and remaining bun halves.
TIP: You can replace blue cheese in the recipe with cheddar or brie if preferred.Photo: Rob Shaw/Bauer
