Bunny Biscuits With Pink Icing

Ingredients

  • 125 g unsalted butter, chopped, at room temperature
  • ¾ cup brown sugar
  • 1 egg, lightly beaten
  • 1 cup plain flour
  • ½ cup self-raising flour
  • ¼ cup custard powder
  • ¼ cup desiccated coconut
  • 2 tsps vanilla extract
  • Candy floss, for tails

ICING

  • 1 cup icing sugar, sifted
  • 2 tbsps milk
  • 1 tbsp butter, melted
  • Few drops pink food colouring

Steps

01. In a small bowl, using an electric mixer, beat butter and sugar together until creamy. Beat in egg. Sift flours and custard powder together. Fold through creamed mixture with coconut and vanilla to form a dough. Turn dough onto a lightly floured surface and knead lightly until smooth.

02. Roll out dough between two sheets of baking paper until 4 mm thick. Chill for 30 mins.

03. Preheat oven to moderate, 180 C. Line 2 oven trays with baking paper.

04. Use a bunny cutter to cut biscuits from dough. Arrange on trays. Bake for 12 to 15 mins. Cool on trays for 5 mins, then transfer to wire racks.

05. ICING In a bowl, combine all ingredients until smooth.

06. Spread icing over cooled biscuits. Add a small ball of candy floss for a tail.
