Easy to make and full of flavor, Cajun prawns are a great alternative to the usual stir-fried recipes.

Ingredients

  • 1 tbsp oil
  • 1 red capsicum, seeded, chopped
  • 2 cloves garlic, crushed
  • 1 chilli padi, chopped
  • 1 tsp ground paprika
  • 500 g green prawns, peeled, deveined, tails on
  • 1 lemon, grated zest, juice
  • 1 tbsp chilli sauce
  • 50 g baby spinach
  • ½ cup parsley leaves, torn
  • Cooked brown rice, to serve

Steps

01. In a large frying pan, heat oil on high. Saute capsicum and garlic, 1 to 2 mins. Add chilli and paprika and cook a further 1 to 2 mins, stirring.

02. Mix in prawns. Saute 3 to 4 mins, until they almost completely change colour.

03. Stir zest, juice and sauce through. Cook a further 1 to 2 mins, stirring.

05. Remove from heat. Toss spinach and parsley through. Serve with rice.
