Caramelised Apple Tarts

Buttery pastry and a perfectly spiced filling make these caramelized apple tarts the perfect afternoon treats!

Ingredients

  • 60 g butter
  • ¼ cup brown sugar
  • ½ tsp cinnamon
  • 1 apple, peeled, cored, cut into rings
  • ¼ craisins
  • ½ cup walnuts
  • ¼ cup apple sauce
  • 2 tsps lemon juice
  • 2 sheets puff pastry
  • 1 egg, beaten
  • Thick cream, pouring custard or vanilla bean ice-cream, to serve

Steps

01. Preheat oven to hot, 200 C. Line an oven tray with baking paper.

02. In a frying pan, melt butter, sugar and cinnamon over a low heat, stirring. Add apple, pear and craisins, stirring occasionally until tender.

03. In a food processor, process walnuts, sauce and juice until a paste forms.

04. Cut eight 11-cm rounds from pastry. Place half pastry on tray. Using an 8-cm cutter, remove centres from four remaining rounds. Brush edges with egg. Place rings on top of pastry rounds to make borders.

05. Spread walnut mixture over base. Top with apple mixture. Bake 10 to 15 mins, until puffed and golden. Serve with thick cream, pouring custard or ice-cream.
