Make a roast beef Panini sandwich with the leftover roast beef from last night! A stack of smokey beef, caramelised onions and cheese, this sandwich will make you wish there were more leftovers from dinner now.

Ingredients

  • 2 tsps olive oil
  • 1 large white onion, sliced into rings
  • 12 pieces leftover roast beef, sliced thin
  • 4 pieces panini or ciabatta bread, sliced in half
  • 4 slices gouda cheese

Steps

01. Heat a shallow pan over medium-low heat. Stir in oil and onions, season with salt and pepper and cook until slightly brown, turning occasionally about 15 to 17 mins.

02. Place 4 pieces of cooked roast beef on each piece and top with ¼ of the caramelized onions. Top with cheese and place in the sandwich press for 3-5 mins to melt the cheese, careful not to burn it.

03. Serve with salad and chips.
