Juicy & Easy Air Fryer Thai-Style Fish Cakes
Enhanced with zesty lime and bold, aromatic red Thai curry paste
Numerous delectable possibilities abound with these red curry fish cakes! From being nestled within a bun, topped off with creamy mayonnaise, to being accompanied with a crisp garden salad, one could hardly believe these remarkably moist and juicy fish cakes come from an air fryer.

Ingredients
- 500 g skinless boneless firm white fish fillets, chopped
- 2 tbsps thai red curry paste
- 1 tsp finely grated lime rind
- 1 tbsp lime juice
- 1 tbsp fish sauce
- 2 green onions, sliced thinly
- 2 tbsps finely chopped coriander
- Olive oil cooking spray
TO SERVE
- Extra chopped coriander, mixed green salad, lime wedges and sweet chilli sauce
Steps
01. Process fish, curry paste, lime rind and juice, and fish sauce in a food processor until mixture forms a smooth paste; stir in green onion and coriander. With damp hands, shape mixture into 12 patties. Spray generously all over with cooking spray.
02. Preheat a 7 litre air fryer to 200 C for 3 mins.
03. Taking care, place fish cakes in the air fryer basket; at 200 C, cook for 8 mins, turning halfway through cooking time, or until golden and cooked through.
04. Top fish cakes with extra chopped coriander; serve with a mixed green salad, lime wedges and sweet chilli sauce for dipping.
