At One Farrer Hotel, the award-winning culinary team has given traditional dishes a touch of gourmet brilliance, with an exclusive new menu that’s ideal for stylish, memorable feasting with family and friends.

A spicy twist to the traditional turkey dinner
This year, executive chef Marcus Tan – best known for creating One Farrer Hotel’s signature laksa and Hainanese chicken rice – puts a bold Mexican spin on the traditional Christmas turkey.
Forget dry, tasteless meat – this turkey dish is set to be the succulent showstopper of your Christmas feast, juicy and rich in flavours and spices.

Introducing the “Delicioso” Turkey, which is filled with the flavours of jalapeno, oregano, cumin, tomato, cinnamon and cloves. It’s served with tortilla skin, tomato salsa, jalapeno, gherkin and a rich cheese sauce. Tying the flavours together is the chef’s own homemade “mole” sauce, a traditional Mexican accompaniment made with dark chocolate and chilli. At $158 (4kg).
In keeping with the Mexican theme, Chef Tan has also crafted a Mexican Style Spice Glazed Chicken Pullet, at $78 (1.6kg).
He shares: “While our forte has always been the introduction of local flavours into our Christmas offerings, this year we are adding a twist of fun for our guests, who will get to savour the unique taste of colourful Mexican cuisine that’s bold, spicy and fresh.”
Those who prefer to celebrate with a traditional meal can still have the One Farrer Signature Salt-Encrusted Turkey served with chestnut stuffing, sauteed bacon-thyme potato, butter poached brussels sprout with chestnut, cranberry orange sauce and pan gravy, at $168 (4kg), as well as a Roasted Traditional Whole Turkey with Spices, at $158 (4kg).

For ham, the hotel will be serving a Pineapple-Clove Glazed Boneless Ham, which comes with roasted maple-glazed pumpkin with sage, apple compote, butter-poached brussels sprouts and grain, and Dijon mustard. At $138 (2kg).
Whimsical desserts to delight the whole family
Playful, imaginative desserts take the spotlight at One Farrer Hotel this year. These specialities are the brainchild of patisserie maestro Wee Pai Hau, a gold medalist at the 2022 Expogast Culinary World Cup and known for his elegant French desserts infused with local flair.
This Christmas, he has delicately crafted a charming chocolate Christmas tree decorated with festive macarons. But the true delight lies within, waiting to be discovered with a light tap. These include almond nuts coated with three types of chocolate – raspberry, passionfruit and milk.

There is also a limited-edition Carousel Fruit Cake, the chef’s innovative take on the classic Christmas cake meticulously crafted to resemble a miniature carousel. Both are available at $118 each (five days’ advance order required).
“As the finale to a good meal, desserts should create some anticipation for guests to look forward to,” says Chef Wee. “Through these creations, we have challenged ourselves to do more than the normal Christmas goodies. This way, guests can bring home aesthetically pleasing surprises for the dining table this holiday season!”
The best of east and west in Yule log offerings
A Christmas Yule log is a must-have and, this year One Farrer Hotel is putting its own unique spin on this traditional roll cake with exciting new flavours.

The Bailey Irish Yule Log Cake pays homage to this popular Christmas liquor, combining it with citrusy orange confit and a crunch of hazelnut royaltine. At $88.
For durian lovers, the Durian yule log will be right up your alley, combining fresh durian mousse with a hint of gula melaka. Also at $88.
A Christmas to remember

For something more upscale and private, explore the hotel’s offerings at the Nest at One Farrer, a lush private experience with bespoke menus. For Christmas, the restaurant will be serving a set dinner inspired by the classics, with Roasted Butternut Veloute, Roulade of Turkey with Sage and a life-like Christmas Sleigh for dessert. At $168 per person.
