Mee siam has a rather interesting history. On one hand, the word 'siam' could refer to the old name that Thailand went by. As such, some believe that the origins of mee siam can be traced back there, where they are modern dishes with a similar make up. On the flip side, some believe that mee siam was created by Malays or Peranakans.
Nevertheless, mee siam is a well-loved sweet, savoury and sour dish of rice vermicelli that has been accented with a gravy containing ingredients such as tamarind (or assam), belacan, taucheo (fermented soybean paste) and even coconut milk. The noodles are then topped with the likes of hardboiled eggs, tau pok, bean sprouts, Chinese chives and sambal for extra heat and flavour.

1. 96 Kwai Luck Cooked Food
96 Kwai Luck Cooked Food has been selling mee siam - and only mee siam - since 1979. Now helmed by Lawrence Chua and his wife, Madam Ong, the stall was started in 1979 at the same location it is today by the former's father using a recipe obtained from an Indian hawker. Lawrence Chua then took over the reins in 1993, where he continues to sell the coconut milk thickened dish. The elderly couple, who are both in their 70s, still continue to sell the dish as affordably and as long as possible. Mee siam is sold for upwards of $3.50 here.

2. Hup Hup Mee Siam
Hup Hup focuses on selling three dishes - mee siam, laksa and lor mee. Clearly, we're going to be focusing on the first here, which also happens to be the dish they are most known for. The hawker stall is headed by second-generation owner Joseph, who inherited his mother's recipes and continues the over 30-year-long legacy of the brand. Because they sell laksa and lor mee too, you can add cockles, fish balls and ngoh hiang to further enhance the mee siam experience. Mee siam is sold for upwards of $3.50 here.

3. Delicious 美味
Like the previous entrant, the hawker stall, aptly named Delicious, focuses on a couple of core dishes - mee rebus, mee siam and lontong. Tucked within Tanjong Pagar Plaza, the premise is owned by a couple and is well-loved among the community. They open at 8am and close by 2pm, though their food is so popular that it often sells out prior to closing time so head there early if you want a taste. Mee siam is sold for upwards of $3.80 here.

4. Jia Xiang Mee Siam
Jia Xiang Mee Siam is likely the oldest mee siam stall in Singapore as it has over half a century of history. Headed by Madam Tan Bee Eng and her son, the former's parents started the hawker stall. She started helping out when she was 12 and now continues to sell the only two, but well-beloved, dishes on their menu - mee siam and lontong. What makes the Jia Xiang stand out is that they prepare the dish using two types of chilli and eggs. Mee siam is sold at $3.50 here.

5. Famous Sungei Road Trishaw Laksa
While the name might prompt you to only try their laksa, it is also their mee siam that has fans returning to Famous Sungei Road Trishaw Laksa. Daniel Soo and his wife have been behind the Michelin Bib Gourmand-awarded hawker stall since 1997. The name is a throwback to the vendors who sold laksa from their trishaws over 50 years ago. Unlike tamarind, or Assam, which is normally used to impart a sour tang to mee siam, Daniel Soo uses a blend of fruit juices instead, which adds a light yet refreshing quality to the dish. 6. My Cosy Corner
My Cosy Corner is a cosy Peranakan eatery tucked within Coronation Plaza, which is a few minutes walk from Tan Kah Kee MRT station. It is a family-run business that was started in the 1990s. There are two star dishes here, mee siam and popiah, though the offerings extend beyond that to include the likes of mee rebus, laksa and kueh pie tee. My Cosy Corner is a relatively small shop too, so expect to wait for a table during peak periods. Mee siam is sold for upwards of $6 here.

7. Aziz Jaffar Muslim Food
It can be rather difficult to find halal-friendly food in the famous Chinatown Complex. But Aziz Jaffar Muslim Food is one of the few purveyors, and they have also made a name for themselves for their mee siam, nasi padang, nasi lemak, and other Malay dishes. The brand started in 1968 and has since opened up a new location in Alexandra Village Hawker Centre in January 2023. Mee siam is sold for $3.50 here.

8. Shi Xian
Shi Xian is another hawker stall that focuses its attention on quality instead of quantity. As such, they only two dishes on the menu - mee siam and mee rebus. The stall has been around for over 40 years. PS: Shi Xian is only open till noon, so come here for breakfast or an early lunch. Oh, and be prepared to queue. 9. Lao Chao Zhou
Founded by Guo Wenwu and his wife, Lao Chao Zhou, or Old Teochew, isn't too difficult to locate within Ghim Moh Road Food Centre due to the snaking queues waiting in line for either its mee siam or satay bee hoon. That said, the hawker stall's Facebook announced that it was halting the sale of the latter come 2024. Either way, the mee siam is known for having a copious amount of dried tiny shrimp that not only further deepens the umami flavour, but also adds another textural dimension to the dish. 10. The Royals Cafe
The halal-certified The Royals Cafe is said to offer one of the best mee siams in Singapore. The recipe is made with 10 different spices that make its Nyonya-style gravy rich and flavourful before it is topped with whole prawns. For those who can't eat meat, The Royals Cafe also offers a vegetarian version that is made without dried shrimp and eggs.
