Sambal is a hot relish made using fresh fruit and vegetable ingredients. For a spicy and punchy strater to whet your appetite, try this cucumber and pineapple sambal that takes all of 15 minutes.

Ingredients

  • 3 tsps shrimp paste
  • 2 fresh small red Thai chillies, chopped finely
  • 1 tbsp lime juice
  • 1 tbsp light soy sauce
  • 1 tsp sugar
  • 1 (130 g) Lebanese cucumber, peeled, seeded, chopped coarsely
  • 1 (800 g) small pineapple, chopped coarsely
  • 6 green onions, sliced thinly
  • Fresh coriander leaves, to garnish

Steps

01. In a heated small saucepan, cook paste on medium heat for about 1 min, or until dry and crumbly.

02. In a small bowl, combine paste and chilli; grind with mortar and pestle. Stir in juice, sauce and sugar; mix well.

03. In a large bowl, combine cucumber, pineapple and onion; stir in chilli mixture. Serve.
