Matcha Shortbread Cookies

Originally used to make shortbread, this recipe gives a healthy modern twist to cookies with a special magic touch of green tea.

Originally used to make shortbread, this matcha cookie recipe gives a healthy modern twist to cookies with a special magic touch of green tea.

Ingredients

  • 300 g plain flour, sifted
  • 110 g rice flour, sifted
  • 2 tbsps green tea powder, sifted plus extra to sprinkle
  • 250 g unsalted butter
  • 120 g caster sugar

Steps

01. Preheat oven to 160 C. Line a baking tray with greaseproof paper.

02. Combine flours and green tea powder in a bowl. Set aside.

03. Cream butter and sugar until light and fluffy. Add in flour mixture and mix well.

04. Lightly flour table top and roll out dough to a thickness of 0.5 cm. Cut out with a cookie cutter and place on prepared baking tray. Use a fork to make pattern on top.

05. Bake for 20 mins. Leave to cool on baking tray for 10 mins before removing cookies to cool on wire rack.

06. For extra green tea flavour, sprinkle over some green tea powder on cookies.
