Ingredients
- 8 kg cooked leg ham
- ¾ cup orange juice
- ½ cup brown sugar
- 1/3 cup marmalade
- ¼ cup water
- 2 tbsps Dijon mustard
- 3 oranges, finely grated zest
Steps
01. Preheat oven to moderate, 180 C. Position shelf in centre of oven.
02. Remove rind from ham by cutting around the knuckle and loosening with fingertips. Pull gently off, towards you and in one piece.
03. Score ham fat by making shallow cuts in one direction diagonally across the fat, then in the opposite direction.
04. In a small bowl, combine juice, sugar, marmalade, water, mustard and zest.
05. Place ham in a large baking dish. Brush orange mixture liberally over ham.
06. Bake 35 to 40 mins until just caramelised, brushing with extra marinade every 10 mins.
