Overnight Date & Muesli Muffins

After mastering the overnight oats, it's only natural to move on to overnight muffins, which only require you to pop them into the oven in the morning. Our recipe for this mood and energy booster includes toasted muesli, bran and dates, a trio that'll help increase your metabolism, keep you full and even improve your digestive system.

Ingredients
- 1¼ cups (185 g) plain flour
- 1¼ cups (160 g) toasted muesli
- 1 tsp ground cinnamon
- 1 tsp bicarbonate of soda
- ½ cup (110 g) firmly packed brown sugar
- ½ cup (30 g) unprocessed bran
- ¾ cup (120 g) coarsely chopped seedless dates
- 1½ cup (375 ml) buttermilk
- ½ cup (125 ml) vegetable oil
- 1 egg, beaten lightly
Steps
01. Combine ingredients in large bowl, stir until just combined. Cover, refrigerate overnight.
02. Preheat oven to 200 C (180 C fan-forced). Grease 12 hole (⅓ cup/80 ml) muffin pan.
03. Divide mixture among holes of prepared pan.
04. Bake muffins about 20 mins. Stand muffins in pan for a few minutes before turning onto wire rack.
