Pandan is like the Asian equivalent of vanilla. Its sweet, floral, and grassy aroma is so well-loved in Southeast and South Asia that we cannot imagine our cuisines without pandan. In savoury preparations, pandan is a staple ingredient that is used to infuse its scent into dishes such as nasi lemak and chicken rice. In sweets, pandan is often the core aroma for Nonya and Malay kueh.

Another way we love pandan being used? Pandan cakes. The light fluffy chiffon cake isn't just well-loved by locals, but foreigners, too. Old Seng Choong was started by Daniel Tay in 2016 as an homage to his late father and his former Marine Parade shop Seng Choong Confectionery. The brand aims to celebrate Singapore's traditions and food culture through its baked goods, ranging from cakes to cookies, yet modernising them for current preferences and aesthetics. 2. Say Lee With Flowers

Growing up with the best kueh in Melaka, art director Ng Say Lee decided to perfect her own recipe for pandan chiffon cake four years ago after no longer wanting to depend on Bengawan Solo. Her creations, accented with beautiful frostings and bespoke decorations, have since graced the tables of Senior Minister Lee Hsien Loong, Michelin-starred chef Gaggan Anand, and local stars such as Rebecca Lim and Michelle Chong. 3. Rich & Good Cake Shop

Fuelled by their passion for baking, mother and daughter Madam Lily and Jeanne Liu took a leap of faith to start Rich & Good Cake Shop in 1997. Swiss rolls are the mainstay here, but you will find chiffon, walnut, and carrot cakes too. 4. Pure Pandan

Mark Ng quit his job as a civil servant to start Pure Pandan in 2010. In the beginning, the bakery only had one product on the menu, the Classic Pure Pandan chiffon cake ($2.50 to $22), but he has since expanded the offerings to include other chiffon cake flavours including Banana Walnut and Durian D24 as well as multiple Swiss rolls iterations including Pandan Kaya ($16/$8.80), Pandan Durian ($18/$9.80), Pandan Cream Cheese ($16/$8.80), and Pandan Black Sesame ($18/$9.80).

5. HarriAnns Nonya Table

Now helmed by third-generation owner Alan Tan, the roots of HarriAnns Nonya Table can be traced back to Madam Chia Nguk Eng who started as a street hawker in the 1940s. The restaurant is known for its Peranakan menu, which includes various pandan cakes such as Pandan Kaya Fudge Cake ($80), Pandan Kaya Swiss Roll ($11), and Pandan Chiffon Cake ($9.80/$28). Pandan-flavoured kuehs have also been made into cakes here, namely the Kueh Salat Cake ($68) and Signature Ondeh Ondeh Cake ($80).

6. Pandan Perspective

Another online bakery to support, Pandan Perspective specialises in chiffon cake and kueh salat. For the former, you can pick between Mini Chiffon Cakes with or without cream ($22.50 or $27.50 for a box of five) or the 8" Chiffon Cake ($23). The latter, on the other hand, is sold as an 8" cake ($48) or as a box of three ($28 for 3.5" x 3"). Another pandan cake option is the 8" Ondeh-Ondeh Pandan Chiffon Cake ($55). Before Uncle Lee started Uncle Lee Confectionery in 2021, he was the head baker at the now-defunct Hock Ann Confectionery. He has been baking since 1986 before the Tanglin Halt bakery shut down due to redevelopment. Under his leadership, Uncle Lee Confectionery just unveiled the latest kiosk in Jewel Changi Airport where fans can pick up the array of nostalgic bakes such as Butter/Marble Cake, Buttercream Cake, and Kaya Cake ($21 for 6", $30 for 8"). The Kaya Cake is made with pandan sponge and housemade pandan kaya.

Bob The Baker Boy is the place to go for unconventional cake designs. Fong May Ee started the brand in 2016 as a home business after graduating from university. Her customised creations started gaining more traction, and May Ee then incorporated her brand in 2018 and moved to a physical space outside of her house in Pandan Loop. For pandan cake, there is only the Signature Pandan Ondeh Ondeh Classic Cake (from $32.90), which is also made with gula melaka and coconut shreds. Of course, you can also have a pandan cake customised to your liking.

Ivy Leow started Nineteen Niche in 2012. The family operation has since included her daughter, Debbie Lim, and expanded to three other locations around Singapore. There, the lowkey bakery serves up a slew of whole cakes and chiffons, ranging from Ondeh Ondeh and Earl Grey Burnt Cheese to Pandan Chiffon ($4.80) and Pandan Chocolate Chiffon ($5.50).
