Salmon Fillet With Green Curry
A super easy recipe for lunch or a weeknight meal. Serve the fish fillet along with steamed rice
These beautiful tender salmon fillets are derived from smearing the fish with a Thai-inspired green curry mixture before being cooked to perfection in the frying pan. While we used salmon, feel free to opt for chicken, prawn and other white meats to go with this intense and appetising base.

Ingredients
- 2 tbsps green curry paste
- 4 salmon fillets
- 1 tbsp vegetable oil
- ⅓ cup coarsely chopped roasted unsalted cashews
- ⅓ cup coarsely chopped fresh coriander
- 1 tsp finely grated lime rind
- 1 tbsp lime juice
Steps
01. First prepare the herb and nut mixture; combine cashews, coriander, lime rind and lime juice in small bowl.
02. Rub 2 tbsps green curry paste onto the salmon fillets. Cook fish in heated oiled large frying pan until desired doneness.
03. Serve fish topped with herb and nut mixture.
