Thai-Style Pork Omelettes Packed With Flavour

These omelettes may look simple, but permeate your senses with eggy and savoury goodness. The recipe is a brilliant concoction of oyster sauce, fish sauce, white pepper and peanut oil, adequately accompanied with additions of carrot, minced pork, snow peas and more.

Ingredients

  • 8 eggs
  • ¼ tsp ground white pepper
  • ¼ cup (60 ml) fish sauce
  • ¼ cup (60 ml) peanut oil
  • 6 green onions, chopped finely
  • 600 g minced pork
  • 1 bunch coriander, leaves removed, stems and roots chopped finely
  • 2 cloves garlic, crushed
  • 100 g green beans, cut into 5 mm pieces
  • 100 g snow peas, shredded
  • 1 large carrot (180 g), shredded
  • 1 tbsp oyster sauce
  • 1 tbsps soy sauce
  • 2 tsps brown sugar

Steps

01. Whisk eggs in a medium bowl with half the pepper and half the fish sauce. Heat a wok over high heat. Add 2 tsps of the oil and 1 tbsp of the green onion; swirl to coat.

02. Add a quarter of the egg mixture, swirling to form a 20 cm round. Cook for 1 min; transfer to a plate. Repeat with another 2 tsps oil, green onion and egg three times to make four omelettes in total.

03. Heat remaining oil in wok. Add pork; cook, using a wooden spoon to break up any clumps, for 10 mins or until browned and cooked through. Add coriander root and stems, remaining green onion, garlic and remaining pepper to wok; stir-fry for 30 secs.

04. Add vegetables; stir-fry for 1 min. Stir through combined remaining fish sauce, oyster and soy sauce, and sugar; cook for 2 mins or until reduced slightly. Stir through coriander leaves.

05. Divide pork mixture among omelettes; fold up to enclose. Serve immediately.
