Ingredients
- ½ cup (60 ml) lime juice
- 1 tbsp fresh coriander (cilantro), finely chopped
- 1 fresh small red Thai (Serrano) chilli, chopped finely
- 2 tsps light soy sauce
- 100 g mixed salad leaves
- 1½ cup (240 g) barbecued chicken, shredded
- 2 medium-piece (860 g) mangoes, sliced thinly
Steps
01. Make dressing. Place ingredients in screw-top jar, shake well. Season to taste.
02. Place salad leaves, chicken, mango and dressing in large bowl, toss gently to combine. Season.
TIP
You need half a barbecued chicken weighing about 450 g for this amount of shredded chicken.
