Sweet and fragrant biscuits made from butter, condensed milk, cinnamon and desiccated coconut. We also added glace cherries for a pop of colour and tart flavour. The bake and slice approach here allows us to create multiple batches of biscuits at once, making this recipe a true godsend for festive occasions.

Ingredients

  • 500 g softened butter
  • 1 cup caster sugar
  • 2 tsps vanilla extract
  • 395 g condensed milk
  • 5 cups sifted self-raising flour
  • ½ cup rolled oats
  • 1 tsp ground cinnamon
  • 100 g finely chopped glace cherries
  • ½ cup desiccated coconut

Steps

01. In a large bowl, using an electric mixer, beat butter, sugar and vanilla together until pale and creamy.

02. Pour in condensed milk, beating well. Fold in flour until well combined. Divide dough mixture into 3 equal pieces.

03. Roll one piece dough into a 20cm-long log. Wrap log in baking paper and chill until firm (or freeze). Repeat with remaining dough, lightly kneading oats and cinnamon into one log and chemes and coconut into the other.

04. Preheat oven to moderate, 180 C. Line 2 oven trays with baking paper.

05. Slice logs into 16 even slices. Arrange on trays, 4 cm apart. Bake 10-15 mins, until golden. Cool on trays; 5 mins before transferring to wire racks to cool completely.
