Masterchef S2 winner Derek Cheong's private dining concept Twelve Flavours is often booked out, but you can now savour his Japanese-inflected mod European cuisine at Makan@Jen. Hotel JEN Singapore Orchardgateway by Shangri-La has teamed up with the chef to present a variety of lunch and dinner menus.
We sampled the six-course dinner menu, available from Fri to Sun. The line-up starts with Chawanmushi, which impresses with silky custard in a rich yuzu ponzu ankake (savoury sauce), aromatic wasabi oil, and delightful bursts of plump ikura. The Hokkaido Scallop, exclusively available for dinner is cooked perfectly, and paired with an earthy ragout of ramson, crunchy fava beans, grilled asparagus and kailan.
Next up, the Black Cod is fork-tender and sits in a velvety beurre blanc sauce of razor clam stock, saikyo miso and sake lees. For $30, you can crown it with fresh N25 caviar. Just for this collab, chef Derek has reintroduced his Iberico Pork, which he has retired from his Twelve Flavours menu. The slow-cooked pork jowl is caramelised on top and tender inside, and glazed with a moreish sweet-savoury ssamjang and saikyo miso glaze. It's accompanied by a bright apple puree, slow-cooked wok hei cabbage; and a roasted pork jus.
For a sweet treat, there's his rendition of the popular 'Tokyo Banana' snack - the Roasted Banana tempts with roasted banana ice cream, Guanaja 70% dark chocolate cremeux, peanut butter ganache, a pillowy peanut sponge and a drizzle of coffee caramel.
Wine pairing menus are available, with natural wines as well as a classic sweet wine curated by head sommelier Britt Ng.
Available from now till Sep 11, 2022. From $58++ per person for a three-course set lunch (Wed and Thurs) to $138++ for a six-course dinner (Fri to Sun). After a two-year hiatus, Lime Restaurant's Lobsterfest is back. From now till Aug 31, dive into a lobster-filled buffet dinner with crowd favourites like the Chilli Crab Lobster, Black Pepper Lobster, Lobster Laksa and Lobster Risotto in Tarragon Cream. There'll also be a seafood bar with the prized crustaceans on ice, or head out to the alfresco barbeque corner for chargrilled lobsters.
To elevate your feasting, there'll be live music by a DJ thrown into the mix. And if you're there from Mon to Wed, you'll be able to catch roving entertainers like the festival mime and jugglers.
The crustaceans will also be part of the Sunday brunch menu with selected lobster dishes available. Not up for a full-on spread? Lime has a three-course set lunch with highlights like the Lobster Cauliflower Bisque, California Lobster Roll, and Homemade Lobster Tortellini as well as a
choice of a delectable dessert, a pint of beer or a refreshing glass of cocktail.
The buffet dinner is at $138++ (Mon to Sun, 6.30pm to 10pm). The buffet brunch is at $88++ with selected lobster dishes (Sat & Sun, 12.30pm to 3.30pm). The three-course set lunch is at $38++ (Mon to Fri, 12pm to 1.30pm).

Beauty In The Pot has reopened its kids' playgrounds, and up to 50 per cent off for ladies
It's time to get the girls. Beauty In The Pot is celebrating its 8th birthday, and to commemorate the occasion, ladies get a fab deal from July 18 to 24. Dine with one gal pal, and you both score 10 per cent off food ingredients; dining with more friends gets you a bigger discount. Bring five other ladies, and you snag 50 per cent off.
And if you have kids in tow, you'll be glad to know that the chain has reopened its playgrounds at all outlets, so the kids can have fun while you dine. The ice cream carts at its Nex and Westgate outlets will also resume operations, while the kiddos can redeem a token for the toy capsule machines at the front of each outlet. If it's your birthday month, there'll be an exclusive celebratory cake available during this period, with limited quantities available daily.
While you're there, you can get slurping on its new broth, the Golden Seafood Pickled Vegetable Broth, which is only available till Sep 30, 2022. The dense broth is simmered for hours using fresh prawns and pork bones, layered with preserved vegetables, vine peppers, pickled peppers and dried chilli for a tart, subtly spicy punch.

Argentinean chef Mauro Colagrec, who's behind the three-Michelin starred Mirazur, is now the main man at the newly opened Fiamma at Capella Singapore. Named after the Italian word for flame, Fiamma serves as a love letter to Colagreco's Italian roots, where diners can tuck into dishes inspired by his grandmother's cooking, with a focus on open-flame cooking and fresh seasonal produce.
Start with the Crudo Siciliano ($34++), orange-marinated seabream doused with mint oil, orange sauce, and pistachio, and a sprinkling of shaved fennel. Or the Carpaccio di Pomodoro E Pesca ($26++), a vegetarian carpaccio of sliced heirloom tomatoes and peaches in a ginger vinaigrette.
From the grill, the dry-aged Bistecca alla Fiorentina ($160++) is good for two, drizzled with a hazelnut sauce to bring a nutty profile to the dish. You can also go for the likes of the Branzino ($76++), which sees a whole salt-crusted sea bass in a citrus virgin dressing, or Gamberoni Aglio e Prezzemo ($76++) — grilled red prawns, garlic, parsley, and Sicilian caponata, a fresh vegetable salad.

If you're looking for a restaurant setting that gives you bang for your buck, check out True Cost, a new dining concept that prides itself on quality dishes priced at a fraction of market prices. Located at Suntec's Sky Garden, the gorgeous interiors are decked with glass windows that afford views of the city - great for an evening date.
How it works: You pay an entrance fee (which varies from free to $15, depending on the time and day), and you get to enjoy seasonal ingredients at a fraction of their market price, according to the restaurant. For free entry, head there between 3pm to 5pm (Mon to Fri).
Of the cold plates, we enjoyed the Red Snapper Crudo, with red snapper slices marinated in zesty mix of lime juice and homemade oyster sauce. There's also the Heh Marinated Scallop ($19.76++) served with pickled cucumbers as well as the Ponzu Truffle Tataki ($9.55++), which were decent but didn't quite impress.
What fares better are their hot dishes. The Grilled King Tiger Prawn ($12.95++) showcased a huge, succulent crustacean with a smoky char, while the Bone Marrow ($14.25++) got a tasty Asian twist with a sprinkling of crisp XO sauce. On the side, you get pita bread to scoop up the warm jiggly marrow. For mains, the Beef Cheek with Pea Puree ($12.75++) was soft, with a sort of curried pea puree that leans on the sweeter side.
