As autumn rolls around, Sushi Tei has introduced a new seasonal menu with 20 dishes that nod the season's best flavours, from the Japanese-style Aki Wafu Carpaccio Roll ($10.80) to the Mini Kaisen Pizza ($8.80) that has succulent seafood atop fried gyoza skin.

Prized ingredients of the new menu: Sake Madai, Maruzen Craft Wagyu, and Selecta Chestnut-fed Pork. The Sake Madai fish, specially bred for Sushi Tei, has a red hue and velvety texture, and can be found in dishes like the Sashimi Moriawase 'Nagasaki' 4 Kinds, alongside three other types of fish, or enjoyed as sashimi or sushi.

Beef aficionados, look out for plates with the Maruzen Craft Wagyu. It comes from the Kagoshima wagyu breed of cattle, which boasts well-marbled meat. You can try it when you order the Volcano A4 Wagyu Don ($27.80). Then there's the Selecta Chestnut-fed Pork, which comes from Selecta pigs bred in Galicia, Spain, and has streaky and flavourful meat.
