A symbol of abundance, prosperity and vigour, Chinese New Year isn't quite complete without its traditional yu sheng salad. While it stays as a toss of raw fish, veggies and seasoning, we switched things up with our own selection of fruits and root vegetables, in addition to addictive salted egg crackers! Check out how to recreate and add your own twist to the dish:

Ingredients

  • 1 piece purple carrot
  • 1 piece carrot
  • 1 piece cucumber
  • ½ piece white daikon
  • 100 g strawberries
  • ¼ piece shredded pomelo
  • 100 g blueberries
  • 1 piece mango
  • 1 tsp red ginger
  • 20 g roasted peanuts
  • 4 tbsps sesame seeds
  • 1 tbsp five-spice powder
  • 2 tbsps sesame oil
  • 2 tbsps plum sauce
  • 200 g smoked salmon
  • 20 g salted egg crackers

Steps

01. Julien purple carrot, carrot, cucumber and white daikon with a spiralizer.

02. Cut up strawberries. Break up pomelo into smaller pieces.

03. Plate all ingredients and drizzle with sesame oil and plum sauce. Sprinkle sesame seeds, roasted peanuts, five-spice powder and salted egg crackers for a finishing touch.

TIP

You can add your favourite fruits for a personalised twist.
