Following the success of her first High Tea series, The Cakes Of Versailles, the dessert maestro is back again with her second high tea set, The Floating World Ukiyo. This time, she collaborates with local fashion designer Ong Shunmugam to showcase the delicate confectionery on the latter’s beautiful Suvarnabumi Porcelain tableware, which is inspired by Asian cuisine and culinary rituals.
The new menu is inspired by the intricate beauty of the porcelain, and named The Floating World Ukiyo (the Japanese word for “floating’, “fleeting” or “transient”), to describe the feeling of being present and mindful of the current moment, and unbothered by stress.
Featuring an exquisite assembly of sweet and salty tastes, it takes Japanese and Asian flavours and techniques on a modern and playful spin: Think miso pork and chicken dumplings wrapped like a candy bun in a homemade red and white skin.
You’ll also get to sink your teeth into other delightful bites like Citrus Bergamot Yuzu Passionfruit Basil Tart, Strawberry Swiss Roll, Rose Chocolates, Soba Noodles, Peach Wagashi confectioneries and fresh, pillowy soft mochis.
Priced at $60 per person, The Floating World Ukiyo High Tea menu is available every weekend at 2am:dessertbar from Nov 14 to Dec 6 2020, with limited sets available each day. Reservations can be made online via 2am:dessertbar.

What we love about La Brasserie‘s Afternoon Tea ($55++) at The Fullerton Bay Hotel is that it combines gourmet French fare with classic Singaporean dishes in one dainty afternoon set. Oh, and the waterfront view of Marina Bay isn’t too bad either.

Brasserie Les Saveurs’ afternoon tea set includes pretty much everything you can think of, from scones and hand-made crêpes to smoked salmon blinis with salmon roe and cream cheese. If you’re after a classic English high tea experience, then we highly recommend L’Espresso at Goodwood Park Hotel. They take their afternoon teas very seriously here, and the hotel just celebrated its 120th anniversary with a special tea blend called the Legacy Blend 120.
Their English Afternoon Tea ($45, Mon – Thu; $48 Fri – Sun, eve of and on PH) runs daily and includes classic teatime sandwiches, scones, cheeses, quiches, bread and butter pudding, and ice cream.
