Malaysian celebrity chef Redzuawan bin Ismail, better known by his stage name Chef Wan, has teamed up with Ginger at Parkroyal on Beach Road to present the best of Malaysia’s palace cuisine. Showcased across four dishes, they’ll be served alongside the restaurant’s Ramadan Festive Lunch and Dinner Buffet from Mar 5 to April 23, 2023.
There’s Laksa Johor, which sees a thick creamy fish-based broth served with al dente spaghetti, as well as Ayam Percik Kelantan, oven-grilled chicken laced with a spiced gravy. For a mutton option, go for Kuzi Kambing Johor, with tender meat stewed in a blend of spices, ghee, tomato puree and more, lending to a sweet, slightly fruity flavour. You’ll also enjoy the Rendang Udang Galah Perak, starring succulent meaty king prawns slathered with a piquant coconut-based gravy. And as a tribute to his grandmother, the spritely chef is also presenting her rendition of Kerabu Mee Hoon Nyonya. This is our favourite of the lot, served chilled with a refreshingly tangy and tongue-tingling mix of spices and ingredients like prawns and fried tofu.

If you’re in the mood for Indonesian food, Kintamani Indonesian Restaurant, which has served up delicious Indonesian food since 1985, is your place.
Eat your way through the hearty spread with mouthwatering crowd favourites like Rendang Daging Sapi (beef simmered in spices and coconut sauce), the signature Peha Kaki Kambing (Roasted Lamb Leg with Chefʼs Homemade Sauces), and Ayam Bakakak (Grilled Chicken with Black Sauce).
Seafood lovers, make a beeline for the likes of Rajungan Saus Padang (Spicy Flower Crab
Padang Style), Udang Mentega (Buttered Prawn), and Ikan Woku (Manado Spicy Fish).

Days Hotel by Wyndham Singapore at Zhongshan Park’s 21 On Rajah has a Ramadan buffet spread to satisfy your rumbling tummy, with options like the crowd-favourite Slow-roasted U.S. Prime Rib-eye in Mixed Spice Marinade, alongside assorted sushi and salmon sashimi. Then move on to Asian specials like Slipper Lobster in Chilli Crab Style Sauce with Mantou, Mixed Seafood with Petai in Chinchalok Chilli Sauce, Belado Paru with Long Bean (beef lung), and the Korean-inspired Beef Bulgogi and Japchae.
During the weekends, diners can look forward to succulent snow crabs from the seafood station, Slow Cooked Roasted Lamb Leg in Tunisian Spice with Saffron Basmati Rice and assorted satay in 21 on Rajah’s house marinade.
There’s a Mediterranean feast to be had as well; think hummus, baba ganoush, lamb moussaka, Moroccan chicken rabat tagine, and Spanish seafood paella. The traditional Iftar rice porridge, Bubur Lambuk, will also be served at the buffet.

The newly Halal-certified Spice Brasserie at Parkroyal on Kitchener Road is marking the occasion with its Iftar Under the Stars buffet. Expect Asian street food favourites, from piping hot bowls of mee soto ayam to Penang prawn noodle soup and assam laksa, to Singapore-style laksa and fried oyster omelette.
Dive into a seafood feast with well-loved delicacies such as Chili Crab, Kam Heong Crab and Scallion White Pepper Crab; Salted Egg Yolk, Black Pepper and Thai Yellow Curry Slipper Lobster, and Kung Pao Prawns and Cereal Tiger Prawns.
Over at the ‘live’ Charcoal BBQ “Panggang” station, there’s freshly grilled beef and chicken satay, otah, Asian Spice Marinated Lamb Flap Rib, Beef Ox Tail, and succulent Spring Chicken. And as a nod to its Little India neighbourhood, there’s an authentic selection of North and South Indian specialities like Goan Fish Curry, Butter Chicken, and Dal Tadka Curry.

You’re in for a gastronomic affair at the halal-certified Carousel, which serves over a whopping 100 dishes across various cuisines, from Mediterranean to Korean, Indian and local delights.
Those breaking fast at the restaurant can look forward to the Heritage Flavours dinner menu, and fill your bellies with plentiful seafood (think Canadian oysters, snow crab legs and Maine lobsters). On Fridays and Saturdays, there’s Alaskan king crab too.
Dive into Asian flavours, from lobster mee soto to chilli crab, wok-fried prawn with black pepper, satay and chicken rice — there’s even nasi ambeng available.

There’s plenty to sink your teeth into at halal-certified buffet restaurant Window on the Park at Holiday Inn Singapore Orchard City Centre. Its Santapan Ramadan (Dining in Ramadan) menu doles out a slew of local, Asian and Western fare for a hearty iftar feast.
Plates like chicken satay, ayam bakar sambal kicap, soto ayam, and ulam (a traditioonal Malay salad) will please those who prefer trad dishes, alongside the likes of chilli crab and laksa. The Lamb Chop Rendang Kerisik Sauce puts ani nventive spin on the classic rendang.There’ll also be Western and fusion-style mains like roasted barbeque chicken, salmon in a salted egg yolk sauce, and baked seafood with tteokbokki.
Leave some space for Ramadan-centric sweet treats like pengat pisang (a banana and coconut dessert) with sago, Um Ali (Arabic bread butter pudding), brownies, cookies and assorted kueh.

Roasts and grills are a highlight this year at Atrium Restaurant at Holiday Inn Singapore Atrium. For its Ramadan buffet this year, its signature is the Whole Spice Roast Baby Lamb, available for dinner only from Fri to Sun. It comes served with pita bread, sambal belacan, spicy kicap manis, yoghurt dip and tomato salsa with jalapeno for a hearty dish not to skip on.
Other delicious bites from the carving station include lamb chops, rib eye, lamb leg and turkey breast. You can also look forward to a barbeque fiesta, with bites like otah-otah, honey chicken wings, sirloin steak and sambal squid on rotation.
For traditional Malay fare, it’s serving up a rotating menu of Ayam Pongteh, Ayam Masak Merah, Beef Rendang, Udang lemak Nenas, Mutton Rendang, Sayur Lodeh, and more.
