Nothing beats a nice, spicy Thai soup with salmon. Coconut milk, ginger, chili and coriander – need we say more? Serve this dish, recipe by Norwegian chef and restaurateur Chef Geir Skeie, with steaming hot rice and enjoy!

Ingredients

  • 1/8 onion
  • ¼ garlic clove
  • 5 g green curry paste
  • 1 tsp sunflower oil
  • 1/8 red chili
  • 5 g ginger
  • ¼ carrot
  • 50 ml coconut milk
  • 200 ml water or fish stock
  • 150 g salmon fillet
  • 1 tbsp fish sauce
  • ½ spring onion
  • 10 coriander leaves
  • ½ lime

Finely chop the onion, and lightly fry with oil, garlic, and curry paste.

Add finely chopped chili, sliced ginger and carrots, fish sauce, water/stock and coconut milk, and bring to boil.

Dice salmon, add and bring to boil.

04.

Add finely sliced spring onions and coriander, and serve with a bit of lime on the side.
