A refreshing dessert with just three main ingredients (dried longan, white fungus, red dates and ginkgo nuts) added, this soup can be served hot or cold to your preference.

Ingredients

Ingredients A

  • 2 L water
  • 3 pandan leaves, knotted
  • ¼ cup dried red dates, remove the seeds
  • ¼ cup white fungus
  • ¼ Luo Han Guo

Ingredients B

  • ⅛ cup dried red dates, remove the seeds
  • ¼ cup dried longan
  • ¼ cup ginkgo nuts
  • Rock sugar, to taste
01.

To prepare the white fungus, soak the white fungus in water for 10 mins, remove the hard part. Soak overnight in the fridge.

Break open the luo han guo using a mortar & pestle.

03.

Place all ingredients A in a big pot to boil, then simmer on low heat for an hour.

04.

Discard the luo han guo, pandan leaves and red dates.

05.

Add all the ingredients B and continue simmer for 30 mins.

06.

Add rock sugar to taste. Serve.
