As sinful as it may sound, carb on carb goes really well for this pizza. Add potatoes to your pizza, and throw in some caramelised onion to add a tad of sweetness to every bite.
For more flavour and bite, you can also add ingredients like olives or cherry tomatoes to this onion potato pizza. For a meat version, add Prosciutto (an Italian dry-cured ham).
Ingredients
- 1/2 cup (110 g) caramelised onion
- 2/3 cup (70 g) coarsely grated mozzarella cheese
- 2 potatoes (240 g), unpeeled
- 1/2 cup (40 g) finely grated parmesan cheese
- 2 tbsps olive oil
- 2 tsps fresh thyme leaves
- 2 clove garlic, crushed
- 1 1/2 cup (225 g) '00' flour, bread flour or plain (all-purpose) flour
- 1 tsp (4 g) dried yeast
- 1 tsp caster (superfine) sugar
- 1 tsp fine table salt
- 1 tbsp olive oil
- 1/2 cup (125 ml) warm water, approximately
Steps
Make pizza dough. Combine flour, yeast, sugar and salt in medium bowl; make a well in the centre. Stir in oil and enough of the water to mix to a soft dough. Knead dough on floured surface about 10 minutes or until smooth and elastic. Place dough in large oiled bowl, cover; stand in a warm place about 1 hour or until dough doubles in size. Turn dough onto floured surface; knead until smooth.
Preheat oven to 240 C. Oil two oven or pizza trays; place in a heated oven.
Divide dough in half; roll each half on floured surface into 15cm x 35cm (6-inch x 14-inch) ovals. Place on trays.
Spread bases with caramelised onion; sprinkle with mozzarella. Using a mandoline or V-slicer, cut potato into paper thin slices. Place potato, slightly overlapping, onto pizzas; sprinkle with parmesan. Combine oil, thyme and garlic in small bowl; drizzle over pizzas.
Bake pizzas about 15 minutes or until base is browned and crisp.
