Stud your classic banana bread with surprise blueberries that add even more fruity flavour. Served with some coffee or tea, this could make for a wholesome way to start your day or as an afternoon snack when you need something to perk you up.
Ingredients
- 2 cups plain flour
- 2 tsps baking powder
- ½ teaspoon ground cinnamon
- 1 cup brown sugar
- 3 medium bananas, mashed
- 125 g butter, melted
- 2 eggs, lightly beaten
- 1 tsp vanilla extract
- ¾ cup fresh or frozen blueberries
Steps
Preheat oven to 180 C. Lightly grease a 10 cm x 20 cm loaf pan. Line the base with baking paper.
Sift flour, baking powder and cinnamon into a large bowl. Stir in the sugar.
In a large jug, combine bananas, butter, eggs and vanilla. Fold into dry ingredients with blueberries until combined. Pour mixture into prepared pan.
Bake for 55 – 60 mins, until cooked when tested with a skewer. Serve sliced.
