A banana cake is heavenly enough, but the icing on the cake, this time, is passion fruit. Light, fluffy and given a spritz of tangy flavour with passion fruit icing, this bake will be great for a weekend treat, especially for the kids.
- 150 g butter
- 1⅓ cup (275 g) firmly packed brown sugar
- 1 egg
- 1¼ (185 g) plain flour
- ¾ cup (110g) self-raising flour
- 1 tsp bicarbonate of soda
- 1 cup mashed banana (4 small or 3 large bananas)
- 2 tbsp milk
Passion Fruit Icing
- 1 cup (160 g) icing sugar mixture
- 2 tsp soft butter or margarine
- 1 tbsp passion fruit pulp (1 large passion fruit)
Preheat the oven to 180 C (160 C fan-forced). Grease a 20 cm baba cake pan or a deep 20 cm round cake pan.
Beat the butter and sugar in a small bowl with an electric mixer until fluffy. Add the egg and beat until combined. Stir in the sifted dry ingredients then the banana and milk. Spread the mixture into the prepared pan. Bake in a moderate oven for about 50 mins. Turn onto a wire rack to cool.
PASSION FRUIT ICING Sift icing sugar into a heatproof bowl. Stir in the butter and passion fruit to form a firm paste. Stir icing over pan of simmering water (or microwave on high for about 20 secs) until the icing is a pouring consistency.
Spoon passion fruit icing over the cooled cake; allow to set.
