A citrus rendition of Kuih Semperit, as a Malaysian traditional cookie, is a fantastic snack to intrigue visitors during Hari Raya Aidilfitri (Eidulfitri)!

Ingredients

  • Flour Mixture
  • 260 g plain flour, sifted
  • 60 g custard powder, sifted
  • 120 g corn flour, sifted
  • 250 g butter
  • 95 g icing sugar
  • 1 egg yolk
  • 1 tbsp orange rind of 1 orange
  • 1 tsp orange paste
  • Emerald sugar crystals, topping

Steps

01. Preheat oven to 150 C. Line baking tray with greaseproof paper.

02. Combine flour mixture in a mixing bowl. Set aside.

03. Cream butter, sugar, egg yolk and orange rind until light and fluffy. Add in orange paste, flour mixture and mix well. Allow dough to rest for at least 30 mins in the refrigerator before baking.

04. Use a semperit mould to shape cookies and sprinkle sugar crystals over cookies. Bake for 20 mins.

If dough is too stiff to press out from semperit mould, add a spoonful or two of milk to loosen it.
