Bake your own traditional Christmas fruit cake using this easy and simple recipe that’ll still marry the classic flavours of Brandy-soaked dried fruit and butter just as well.
- 250 g butter
- 1 tbsp glycerine
- ½ tsp baking powder
- 200 g sugar
- 200 g all-purpose flour
- 5 eggs
- 1 tbsp milk powder
- 250 g sultanas and dried mixed fruits, pre-soaked in brandy for at least overnight
Preheat oven to 180 C.
Cream butter and sugar till light and fluffy.
Add 5 eggs in slowly and cream till smooth and light.
Add glycerine then the flour, baking powder and milk powder. Mix until well incorporated.
Add sultanas, dried mixed fruits and flour. Mix until well combined.
Butter a loaf pan and pour batter into it. Bake for 35 mins or until golden brown.
Brush some brandy onto loaf, cut and serve.
TIP: For maximum intensity in flavour, it is recommended that the dried fruits be soaked in Brandy for at least 2 weeks to 2 months.
