Light, refreshing and with a bit of alcoholic kick, this frozen cocktail is perfect for those warm and humid evenings.
- 400 ml coconut water
- 3 cucumbers, grated
- 2 cups water
- ½ cup caster sugar
- 15 kaffir lime leaves, bruised, plus extra to serve
- 1 cup gin
- 2 limes, zest grated, plus juiced
In a jug, combine coconut water and grated cucumbers. Pour into a snap-lock bag. Remove air, seal, freeze overnight.
In a saucepan, stir water, cup caster sugar and bruised kaffir lime leaves on low until sugar dissolves. Boil 5 mins. Set aside 20 mins to infuse. Strain and cool.
Pound cucumber with syrup, gin and grated zest and juice the limes. Pour into glasses. Serve with cucumber and extra kaffir lime leaves.
