Celebrate any joyous occasion with this sunrise on a plate, which comes with the citrusy zing of cured grouper and mandarin orange. While it won’t replace your yearly yu sheng, it will make an auspicious fish dish for the family feast.
- 1 large red onion, very thinly sliced
- 1 whole mandarin orange
- 600 g grouper fillet (or other white fish), skinned and trimmed
- Lemon juice and chilli marinade
- Red chilli, diced
- Coriander leaves
- Salt, to season
In a bowl, season grouper with salt. Pour over with lemon juice and chilli marinade. Leave to cure.
Combine mixture with sliced red onions, followed by peeled and sliced mandarin orange.
Add diced red chilli and chopped coriander leaves. Mix well, and serve.
