Not only do these hasselback potatoes add a quaint and charming element to the dinner table, they also come with a ridiculously irresistible crisp that will pair beautifully with your slew of roast dishes this festive season. All it takes is some butter, olive oil, and breadcrumbs for that extra crunch – no fancy additions needed.


  • 40 g melted butter
  • 2 tbsps olive oil
  • ¼ cup stale breadcrumbs
  • ½ cup finely grated cheddar cheese
Preheat oven to 180 C.

Cut potatoes in half horizontally; slice thinly, without cutting all the way through. Coat in combined melted butter and olive oil; place in baking dish.


Roast, uncovered, 45 mins, brushing with oil mixture. Roast a further 15 mins, without brushing, or until potatoes are tender.


Sprinkle combined breadcrumbs and cheddar cheese over potatoes; roast about 10 mins or until browned lightly.
