Raw salmon is delicious! Combine diced salmon with fresh vegetables, chili, lime and soy sauce to make the perfect quick and healty meal – your very own Hawaiian Poké. Recipe by Norwegian chef and restaurateur Chef Geir Skeie.

Ingredients
- 80 g risotto or sushi rice
- 75 ml water
- ½ tsp salt
- 150 g salmon fillet
- 2 tbsps soy sauce
- 2 drops sesame oil
- 1/8 finely chopped red chili
- 1/8 finely chopped red or spring onion
- 1/8 broccoli
- 6 sugar snaps
- 2 tbsps chili mayo (mayo with hot chili sauce, like Sriracha)
- ½ lime
Steps
01. Bring rice, water and salt and bring to boil, leaving the lid on, at low heat for 40 mins. Don’t touch!
02. Dice salmon in 1- to 2-cm cubes, and mix with soy sauce, sesame oil, chili and red or spring onion.
03. Boil vegetables al dente, and cool off in icy cold water.
04. Pad vegetables dry, mix with chili mayo, lime juice and spring onion.
05. Serve rice with salmon and vegetables.
